Thanksgiving Fall Harvest Salad features seasonal ingredients like pomegranate, apples, and turkey for a seasonally fun meal. This healthy meal is great to use any turkey leftover meat along with getting a good source of iron from the citrus dressing and salad combo.
The citrus in the dressing helps the iron from the greens absorb into your body. I love this salad because Fall is my favorite time of year. I like to use the seasonal harvested fruits and meats from September through October in my salads.
The Turkey Salad
Using leftover turkey meat is great on this salad. However, if you want to make this salad with sliced deli turkey meat that will work as well. When it comes to the apples in this harvest fall salad I like to use honey crisp.
Honey crisp apples are generally an apple everyone would like. If you want a little more tart granny smith apples would also do well in this Thanksgiving style salad. Fuji and red delicious are fantastic to top this salad with too.
I buy pomegranate that is already seeded by Pom. It’s easier and can be bought year round at most stores. The cashews I buy roasted and salted from my local central market but even canned cashews will do.
The Salad Dressing:
I prefer the spring salad mix however, any type of salad mix will work. Even baby spinach would be tasty with this salad. The orange dressing is my favorite but you can really use any dressing you love. Sometimes I use parmesan dressing.
This is the perfect Thanksgiving Fall Harvest salad for Thanksgiving leftovers. It’s also a great way to have Thanksgiving dinner for two. Hence it makes a great way to have Thanksgiving for a small number. Not all Thanksgivings are the full blown turkey and sides.
- 2 1/2 cups spring mix salad
- 1 honey crisp apple; sliced
- 4 tablespoons pomegranate
- 1/2 lb sliced turkey meat (may also used leftover turkey)
- 4 ounces cashews
- 1 cup orange juice (I used simply orange)
- 2 tablespoons olive oil
- Slice apples. Wash salad and place on plate. Top with pomegranate, turkey meat, cashew, and sliced apples.
- In a bowl wish together orange juice and olive oil. Drizzle over salad.
