Vegan Quinoa Buddha Bowls

  • 1 cup quinoa
  • 2 cups water
  • ½ teaspoon salt
  • 1 avocado; sliced
  • 1 yellow bell pepper; diced
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 10 sunburst tomatoes
  • 3 spring onions; sliced


  1. In a small pot, add in quinoa and water. Top with salt and give it a stir. Bring to a boil. Reduce to a simmer. Cook for 15 to 20 minutes until done.
  2. Place quinoa in a bowl and top with peppers, avocado, carrots, cabbage, tomatoes, and spring onions.
