When basketball season trickles it’s way into our home it’s another reason for us to have friends over. When feeding the masses I have this pasta that goes pretty far. It’s called Pasta Alla RO*TEL. Instead of the usually queso we use RO*TEL to make a pasta salad that feed plenty more. It includes very few ingredients!
I started off by picking up two cans of RO*TEL in the canned vegetables section at Walmart while I am grabbing everything else I need. The best way for me to shop with my busy schedule lately. The rest is pretty darn simple to put together. I like to make this the night before so it can kind of marinate in the fridge overnight. This can be a hot pasta dish also. Versatile is always a good thing when your having people over to watch a basketball tournament. For Pasta Alla RO*TEL you only need two cans of RO*TEL, avocado, red onion, tomato paste, and few seasonings. You can make this dish as spicy as you would like. The heat is easily controlled in the recipe however, I like to spice things up a bit!
Wow your guests by serving this in small cups with spoons ready to eat. Easy for them to grab it, pop on over to the couch, and have fun poking at each other over who’s team is best. We sure do that! Gemelli pasta topped with RO*TEL along with red onions and avocado.
- 1 – 12 oz package gemelli pasta
- 2 cans RO*TEL
- 1 small can tomato paste
- 1 avocado; diced
- ½ tablespoon cumin
- 1 red onion; diced
- ½ tablespoon paprika
- 1 teaspoon cayenne pepper (you many use this to control heat)
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Boil pasta as directed on the package. Drain and pour into a large bowl.
- In a small bowl, mix together spices, RO*TEL, and tomato pasta. Mix well and pour over pasta. Mix until pasta is covered in sauce.
- Stir in avocado and red onions. Serve hot or refrigerate overnight.
Top with cheese and avocado for garnish.
