Well the weather is heating up in this part of the world and that means it’s time for those summer side dishes. The sides that pair well with grilled meat or can be fantastic on their own after a hot day of errands. This Cucumber Radish Salad is a simple salad that takes under 5 minutes to make.
Probably one of my most favorite things about summer is summer salads. The side salads really are great to eat on their own, serve up at parties or potlucks. Even fantastic for simple side dishes to pair with pork, chicken, and steaks. With grilling season here salads like this cucumber radish salad fit nicely along side a petite sirloin.
Therefore, you may not want side salads to be covered in mayo or drowned in a dressing. I topped these cucumbers and radishes in a vinegar, sugar, and dill mixture. This salad recipe is gluten free, dairy free, and egg free. Sometimes simple ingredients really can enlighten the flavors of a vegetable or fruit.
When it comes to the radishes sometimes I just buy them in a pre cut package because of the adorable crinkle cut on them. Other times the radishes can be easily cut from a fresh bundle. I sliced the cucumbers thinly with a knife. If you have mandoline slicer than you can use that instead.
I have made this Cucumber radish salad a day or two ahead. It allows the vinegar and sugar to sink into the vegetables and fruit. This allows it to slightly pickle them. If you don’t eat it all the first day know it’s great for leftovers!
What Would I Pair This Cucumber Radish Salad With:
A great lemon pepper pork chop goes great with this salad for an all over lightweight meal. If you want something a bit more hearty this recipe might work. Therefore, this grill recipe is a fantastic match for the salad try bacon and bourbon chicken kebab. Both would pair well with this Cucumber Radish Salad. - 1 cucumber; sliced
- 1 cup red onion; sliced
- 1 cup radishes; sliced
- 3 tablespoon apple cider vinegar
- 1 teaspoon pepper
- 2 teaspoons sugar
- 1 teaspoon fresh dill
- 1 teaspoon salt
- In a bowl, add sliced cucumbers, radishes, and red onion. Toss well.
- In a small bowl, whisk together vinegar, sugar, salt, pepper, and dill.
- Pour over salad tossing as you pour. Place in fridge until ready to serve.
If you would like to omit the sugar you may replace this with the same teaspoon of honey.
