Classic Savory Pumpkin Soup

  • 1 cup vegetable broth
  • 1 can pumpkin puree (fresh pumpkin roasted and pureed)
  • 2 sprigs of thyme
  • 1/2 white onion; diced
  • 1/2 tablespoon butter (or 1 teaspoon olive oil)
  • salt and pepper
  • 1/2 teaspoon cinnamon
  • 1 tablespoon heavy cream


  1. Place butter and onions into a sauce pan. Bring to medium heat and cook until onions are transparent.
  2. Add pumpkin puree and vegetable broth. Whisk well. Set to low and cook for 3 minutes.
  3. Add thyme and cinnamon then stir. Top with salt, pepper, and heavy cream. Serve.
