Sometimes you just need a lunch that takes about five minutes to make. This Avocado Cucumber Tomato Salad one is great to go in a jar on the go. You may even prep in advance as long as you add the avocado when your ready to eat it. Those avocados blacken fast so I leave them until I am ready to eat. Lately, I am so tired of eating out. The options of healthy food when it comes to fast food are seriously scarce.
In addition to our busy schedules sometimes I find it hard to carve out time to cook. Dishes like this Avocado Cucumber Tomato salad come together quite quickly as a side dish to a meal. But we end up visiting fast food and restaurants more often. While the restaurants have plenty of options usually the fast food places do not. This has me thinking about meal prepping. Why not it could really save some money. Even save on time.
Could it benefit me to take one day a week for meal prepping several different styles of meals. Then freeze them for easy microwave dinners for later. Maybe something like chicken and asparagus could be a great dinner in these. I don’t mind taking five minutes to make side salads. Avocado Cucumber Tomato Salad
Yield 4 Servings
- 1 avocado; sliced
- 4 roma tomatoes; quartered
- ½ red onion; rounds
- 2 cucumbers; spiralized
- ⅓ cup Tuscan house dressing
- ½ teaspoon salt
- ½ teaspoon pepper
- Spiralize cucumbers. Add in sliced avocados, quartered tomatoes, and red onions. Toss well.
- Add dressing and toss well. Add salt and pepper. Put in fridge until ready to serve.
