Creamy Macaroni Salad
Spring is around the corner and many people will be looking for the perfect potluck or picnic side dish. Creamy macaroni salad is easy to make while being perfect for those potlucks or picnics. Additionally, the macaroni salad is easy to make in advance.
With this easy creamy macaroni salad it’s the perfect side dish to many main dishes. We served this up with barbecue meatballs, pulled pork sandwiches, and even with sloppy joe’s. While this simple macaroni salad doesn’t come with egg it can easily be added.
This is a southern macaroni salad which is often found on the store shelves. However, this is very simple salad from scratch. Easily prepared a day ahead. We freshly chopped the ingredients although if you want to buy pre cut vegetables you surely can.
The Sauce:
Next up is the sauce for the salad. Made with mayonnaise, cider vinegar, and a tad of mustard the salad is all about the flavor. In this version of creamy macaroni salad we add dill to the sauce to give it a light and spring flavor.
Once you toss the sauce over the salad the bowl can go into the fridge. If you do leave it overnight the pasta may soak up a lot of the sauce. Just add a bit more mayo to it to make it creamy again. Usually more mayo and dill is added in our home.
One of my specialties is pasta salads. Pasta salads are always request from family and friends for events. This creamy macaroni salad was a hit in our home. Including and not limited to the dog of which we caught carrying the bowl off the counter.
If there is a possible event coming or people coming over macaroni salad is my go to item. Just made ahead and pop in the fridge. When you need it, it’s there to accompany any meal. Pack it into jars for on the go food!

Creamy Macaroni Salad
Ingredients
- 1 cup carrots; shredded
- 1 red bell pepper; diced
- 3 celery stalks; diced
- 1/3 cup relish
- 1 lb elbow pasta
- 1 cup red onion; diced
- 2 tablespoons Dijon mustard
- 1 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 tablespoon dill
Instructions
- Boil noodles as directed on package. Drain and cool.
- Place carrots, red onion, bell pepper, celery, and relish on the noodle in a big bowl. Toss well.
- In a same bowl mix together Dijon mustard, mayonnaise, and apple cider vinegar. Stir well. Add in dill and stir well.
- Fold sauce into the pasta making sure that the salad is well coated. Top with salt and pepper and toss again.
- Place in fridge until ready to serve.
