One of Japan’s oldest breweries, with a history dating back to 1888. The mythical Kirin Beast is considered a good omen of serenity and prosperity.  In Japan, when everyone is ready to drink, they salute by saying “kanpai.” Kirin is a great beer and definitely needs to be served in a glass. It pairs perfectly with an Japanese cuisine especially my favorite sushi.

 I always think my beer should match my food. When eating Czech food I look for a good plisner or bock. When it comes to sushi a bock wouldn’t fit at all. Kirin is a perfect match to sushi. but the light version is better and goes well with noodles. Cucumber and avocado filled sushi topped with avocado and served with Kirin.

Ingredients
  1. 1 1/2 cups sushi rice
  2. 2 cups water
  3. 1 large avocado; cut horizontal thin pieces
  4. 1 cucumber; cut vertical long pieces
  5. 3 sheets of sushi nori
  6. 1 -2 tablespoons chili sauce
  7. Few drops of wasabi
Instructions
  1. In a sauce pan, add rice and water. Bring to a low boil and then lower heat and cook for 20 minutes or until rice is done. Cool rice.
  2. Take your bamboo sushi roller mat and layer it with plastic wrap. Place sushi nori flat on plastic wrap. Layer with rice on one half side of back. Flip over sushi nori with rice to where the rice is facing down onto the plastic wrap. Place 2 strips of cucumber and a few slices avocado inside. Using the roller, roll sushi forward and use roller to tighten the roll. Roll again and then tighten.
  3. Layer avocado slices over the top and top with plastic wrap. Tighten again. Leaving plastic wrap in place slice into sections. Remove plastic wrap and serve with a side of chili sauce and wasabi.
Notes
  1. Serve with ice cold Kirin in a glass.

Lemon & Cracked Peppercorn Fish & A Giveaway

Have I mentioned in the past how much I love fish from Gorton’s Seafood? I really do love the fact that with having a daughter with a seafood allergy, Gorton’s makes it easy peasy to make up some seafood for half the house. These fillets have just the perfect amount of seasoning and lemon flavor. We used our the cutting board they sent us to cut some fresh spring onions to top it with. We also sided it with a strawberry mango salsa and a baked potato for a simply easy dinner.  Another reason we love Gorton’s is when my son works late all he has to do is come home, pop this in the oven, and have a decent dinner for himself. He also loves them for a late lunch after school (he gets out earlier than most). 

We also picked up the Southern Fried Fish for my other half to use on those nights I take off to the race track or out busy with work. It’s nice to have a go to food. What do you use for your go to foods?

For Salsa
  1. 10 strawberries; diced
  2. 1 mango; peeled and diced
  3. 1/4 teaspoon salt
For Fish
  1. Cook fish as directed on the box.
For Salsa
  1. Mix in a small bowl both strawberries and mango. Add salt and stir well. Serve with fish, lemons, and spring onions.

Tilapia with Strawberry Avocado Salsa & A Giveaway

Last night we made Tilapia with Strawberry Avocado Salsa from Gorton’s Simply Bake Tilapia. It was super easy to prepare which what so nice! On the run between a interview my son had and then getting him his late night haircut before starting working in the morning. I was able to quickly pop this in the digital oven while slicing up the fruit for the salsa and stem rice. Complete meal done in thirty minutes. You can’t beat that; and it’s healthy to boot!

High in protein, 100 calories or less per fillet, and gluten free, which is super great for starting the new year off healthy. I wanted this dish, Tilapia with Strawberry Avocado Salsa to be super food healthy and something easy. That’s why I made a simple sticky rice to pair with a salsa that consists of strawberries, avocado, red onion, and pineapple. It’s a meal that won’t make you feel guilty like when you eat a huge burger stuffed with bacon and cheese.

Here is the recipe for the Tilapia with Strawberry Avocado Salsa. I would pair this with a lemon rice, white rice or brown rice. I loved the baked carrots with it. It would also go great with grilled asparagus. They also offer Grilled Tilapia which is one of their 11 varieties of gluten-free grilled fish.

For the fish
  1. Two boxes of Tilapia from Gorton's
For the Strawberry Avocado Salsa
  1. 12 strawberries; diced
  2. 1 avocado; diced
  3. 1 can pineapple bits
  4. 1/3 cup red onion; diced
  5. Salt and pepper
For the Tilapia
  1. For the tilapia please follow Gorton's boxed directions.
For the Strawberry Avocado Salsa
  1. In a large bowl, add diced strawberries, diced avocado, diced red onion, and one can of drain pineapple bits and toss. Salt and pepper and toss lightly again. Refrigerate until ready to serve.
Notes
  1. Serve with steamed white or brown rice.

We don’t often eat seafood in our home since my daughter is allergic. I love that I can get Gorton’s and eat it separately on a baking sheet she does not use in order to have my seafood fix. I love their popcorn shrimp. With the holidays around the corner they make appetizers super easy. These shrimp peperoncini appetizer spoons are simple to put together in under 20 minutes. Great for a last minute gathering.

So here’s my recipe for Shrimp Peperoncini appetizer spoons. You can always top the shrimp with horseradish or cocktail sauce too! Think caprese with parmesan cheese and tomatoes. There is so many options. It’s really up to your creativity. What would you put with your popcorn shrimp?

  1. One package Gorton's popcorn shrimp
  2. 1 small Roma tomato; diced
  3. 1 jar sliced peperoncini's
  4. Chinese soup spoons
Instructions
  1. Bake shrimp as directed on the package. Dice Roma tomato and set aside. Add shrimp to soup spoons, top with peperoncini's, and Roma tomatoes. Serve with cocktail sauce.

Citrus Dill Salmon

Before the weekend I had the coolest event happen. We sometimes get a late night visitor in the neighborhood and his name is Jake. He is an Australian Shepherd that gets loose from his home and comes from the ranch houses to visit us. After calling his owner to come pick him up, I found out the owner is a bee keeper;  just a street over. I was so stoked! Nothing is better then really close local honey during allergy season. He was nice enough to bring us a jar. Just super neat to hear of a bee keeper so close to home!

Memorial weekend is soon to be upon us. Many of you are looking for recipes to share with friends and family when remembering our loved ones. I really want to share a few healthy recipes that I grew up eating on the beach during Memorial Day weekend. Growing up near the ocean, you find that, fish becomes such a great option when grilling. Then you move to Texas and the closest thing to fresh fish is Catfish; it really sucks! I prefer ocean fish or river fish. Mostly, it’s swordfish for me. Although, my oldest teenager loves all styles of fish and has decided to have me prepare every style in different ways for him. This helps everyone else in the family eat healthier, so I am all for it!

Citrus Dill Salmon (1)

Lemons are traditional to the California coastline, in which, that is why we incorporate them into almost every dish with fish. Topping fish with lemon removes some of the fishy taste and will make it more handle-able for most to consume it. When in doubt use lemon. This citrus dill salmon is so pretty!

Ingredients
  1. 1 filet of salmon
  2. 1 to 2 tbsp dill weed (depends on size of filet)
  3. 2 lemons
  4. 1 orange
  5. Salt and cracked pepper
Instructions
  1. Lay out two sheets of foil, one larger then the other, placing the smaller one centered on top of the larger piece of foil. Lay salmon filet in the center with skin/scale side down. Top with salt, pepper, and dill weed.
  2. Slice the first lemon in half and remove seeds with fingers. Squeeze both halves of lemon over the top of the salmon. Slice the other lemon and orange in large rounds and place on top of salmon evenly. Pull sides of foil up and press together sealing the fish inside.
  3. Place on grill heated to medium to low heat and cook for 30 minutes or until fish starts to separate from skin and changes color. Use spatula to separate fish from skin and serve.
