Recently, a friend of mine for over 20 years that is a chef cooked my family dinner.  He made a chili with ground chicken and pork sausage mixed together with black beans. My family loved it! I didn’t get a chance to try it because my jaw was infected. This amazed me as every time I tried to feed my family any other ground meat besides beef they usually refuse to eat it. Then I decided to make Country Club Chicken Tortellini. They actually ate it too!

Tyson actually sells ground chicken so you don’t have to have a fancy meat grinder for your Kitchen Aid to get ground chicken. It’s also inexpensive which is a definite plus. I picked it up at Walmart in the chicken section. See my Google + album for my shopping experience!

How to make Country Club Chicken Tortellini

Here is what you will need to make Country Club Chicken Tortellini.

Dice onion, slice mushrooms, and smash the garlic. Set aside. Sorry, the garlic and tortellini’s didn’t make it into the picture above.

Take five or six strips of bacon and slice it into pieces.

Fry bacon with a bit of olive oil until bacon is cooked. Set bacon aside on a plate and leave bacon grease in the pan. Add ground chicken to bacon grease and fry until chicken is a light golden brown and cooked all the way through. Put on pan of water on to boil for tortellini’s with a pinch of salt and a tablespoon of olive oil.

Drain excess grease and place chicken in a bowl on the side. Add tortellini’s to pot and cook per the directions on the package. In the same pan add in one stick of butter, the onion, the mushrooms, and the garlic. Add a pinch of salt. Saute the vegetables until they become tender and butter is melted. Add 1 cup of heavy whipping cream and cook on medium heat until the cream thickens. You will know when the cream is thick as it will stick to the spatula or spoon and not run off easily. Once it thickens add in the parmesan cheese. About 1 cup to 1 1/2 cups of the cheese. Fold in the cheese and remove from heat. Drain the water from the tortellini’s.

In a large bowl, combine chicken, tortellini’s, and sauce. Fold the sauce in over the chicken and the tortellini’s. Top it off with crumbled bacon and Italian parsley for garnish.

There you have it! Country Club Chicken Tortellini!

Our school could definitely use more costumes for the Theater Arts class. My daughter loves it but I spend enough every year to add costumes for the plays. It would be nice to see them use this to fund some costumes that could be used year to year. It is just so simple that I hope to collect through out the year and contribute. Besides, the other half, V, loves Tyson’s boneless buffalo wings.

Buffalo Chicken Sliders & Tyson’s Project A+

Ingredients

1 package of Tyson's Boneless Wyngz - Buffalo Flavor
1 small jar of dill pickles
1 package of rolls or slider buns
1 bottle of dressing (ranch or blue cheese)

Instructions

Cook buffalo wings per directed on package at 400F degrees for 18 minutes. Slice wings in half. Slice rolls in half and layer wings onto the roll.

Top wings with pickles and drizzle with blue cheese or ranch dressing. Add top of roll and serve. Each boneless wing makes one slider.

Summer Chicken Soup

Summer chicken soup is for those days you want to stay inside, curl up on your couch, and watch movies with your teenagers. Sometimes we will do movie marathons like all Harry Potter films, Pirates of the Caribbean films, or Lord of the Rings films.  Once in a awhile, it is a two day fest and we do all Star Wars films.

Films are a huge past time in our home and we completely enjoy group outings to the movies. My middle son, Chancelor, is a movie connoisseur and we share many movie moments. With the release of last Harry Potter film he said it was like the ending of his childhood. Super sad!

Today is Harry Potter & J.K. Rowling’s birthday and I didn’t even know it until after I started this post! Happy Birthday to both of them. Looks like some lunch and Potter movies are in order for my daughter and I. Wish we still had some of this soup left over but they devoured it. She just tried to snag me and watch The Fosters but instead we are watching Catfish temporarily then some HP.

Enough about movies and TV shows. I want to tell you about this amazing summer chicken soup! Total comfort food and light for the summer time. I used stelline pasta and peas to round off taste and color. The chicken is slow cooked first and then vegetables are added in. Lastly the pasta and peas. This summer chicken soup is a simple dish to make. However, it does take some time to slow boil the chicken.

Is there a favorite pasta you like in your chicken soup? Or are you the big dumpling fan? Personally, I am fan of orzo’s or stelline because small pasta to me allows for more juice and carrots! I am interested to know what you like in your soup.

Summer Chicken Soup

Cook Time: 4 hours

Serving Size: 6 to 8 bowls

Summer Chicken Soup

Ingredients

5 chicken leg drumsticks
1 lb carrots
1 cup peas
4 cloves garlic
1 large white onion
1 container of chicken broth
1 package of stelline pasta (stars)
1 tablespoon cumin
Salt and pepper

Instructions

In a large stock pot, add in chicken legs and cover with water 3/4 of the way full. Add cumin to pot. Bring water to a boil and lower heat to low and simmer for about two hours until the water looks like a broth. It will be darker with oils.

Bring the chicken back up to boiling for about 20 minutes. Reduce to low heat again. Remove chicken from the pot. Remove meat from the bones and add the meat back to the pot. Make sure that all bones even small are removed from the pot. Remove chicken skin also.

Once all meat is added back cut tops and bottoms off the carrots, cut in half, and add them to the pot. They do not need to be diced as you will mash them later. Add diced onion and minced garlic to the pot. Cook until vegetables are soft. Pull out carrots and mash them with a fork and add them back to the pot. Add in extra chicken broth. Add salt and pepper. Bring back to a low boil.

Add three handfuls of stelline pasta and 1 cup of peas. Cook until pasta is almost completely soft. Turn off pot and serve with french bread.

Summer time is here and for us that means visits to lakes and pools. Sometimes you just have enough of grilled food. My family insists that BBQ grilled chicken is am absolute no in our house at the moment. Though, chicken is healthy and needs to be a part of your weekly meal planning. Chicken wraps are fantastic with Tyson’s Chicken Fries used with dips and perfect for a chicken dinner.

Instead of cooking up some grilled chicken or another style of hot dog Tyson’s Homestyle Chicken Fries are perfect for a lunch or dinner on the go out to the lake. Simple to heat up in the oven and toss them in to a delicious chicken wrap. Tomatoes, cucumbers, sprouts, lettuce, or cheese the fillings are endless and full nutrients that are needed when your out in this summer heat.

We like our chicken wraps with sun dried tomato wraps along with cherry tomatoes, lettuce, and zesty Italian dressing. A little fresh Parmesan cheese adds an extra kick of flavor to the wrap.

She really loves these chicken wraps when we go to the lake! Easy to wrap with foil and just toss in a bag off in the cooler. What’s great about chicken is it is edible cold or hot.

Ingredients

Tyson Chicken Fries
1 package cherry tomatoes
1 head of lettuce
1 package of sun dried tomato wrap tortillas
1 small bottle of zesty Italian dressing

Instructions

Preheat oven as directed on the back of the Tyson package. Cook chicken until done as directed.

Wash lettuce while separating and set aside. Wash tomatoes. Slice tomatoes in halves and set aside. Lay out wrap and fill with chicken, tomatoes, lettuce, and drizzle with dressing. Roll up wrap and enjoy!

Pulled Pork Sandwich

The fourth of July was truly a blast! This is the pulled pork sandwich that I whipped up in the crock pot for our guests. The beautiful potato salad in the back is a Czech recipe made by the other halves mom’s recipe. It really is the best potato salad around!

Our family and friends showed up to enjoy food before heading out the Flo Mo Festival for fun and fireworks. The ice cream cake was the only food item that did not turn out as planned. We had to break out a torch to release it from the glass loaf pan mold. Guess that means it is indefinite that a spring form pan is to be bought in the near future.

These pulled pork sandwiches were such a hit. Everyone had seconds and even sent some home to my grandmother, which called to inform me how tasty they were. I have always been a fan of apples and pork together but was not sure on slow cooking the pork shoulder in apple cider.  Instead, I halved the apple cider with vegetable broth while adding in smoked paprika and cumin to bring in the meat not too sweet flavor. It married perfectly!

This will definitely be on next years to-do list for the 4th. Though, I would like to get some cute wraps for the sandwiches so we can pack them up and take them to the festival with us. The mean hand dipped jumbo corn dogs were calling my name but luckily the other half kept coaxing me out of them. Now, I will just have to make homemade corn dogs with extra goodies. Oh and funnel cake too!

The fireworks were pretty along with a good show from Rick Springfield. Can not wait to see who they bring out next year. I am in hopes that even more people will join us as it is good, wholesome fun. How was your 4th of July?

Pulled Pork Sandwich

Prep Time: 15 minutes

Cook Time: 12 hours

Yield: 24 sandwiches

Pulled Pork Sandwich

Ingredients

3 lbs pork shoulder
64 oz apple cider
32 oz container of vegetable broth
3 tablespoons cumin
3 tablespoons smoked paprika
3 to 5 drops of liquid smoke
1 white onion, sliced into rounds
1 whole garlic; peeled
Salt and pepper

Instructions

In a large crock pot, add in peeled garlic and pork shoulder. Slice onion into rounds and layer over the top of the pork.

Fill crock pot half way with apple cider. Fill the rest of the way with vegetable broth. Add in cumin, paprika, liquid smoke, salt, and pepper. Turn crock pot on high to bring to a boil. Once the broth starts to boil lower to low and cook all night; generally about 8 hours.

The next morning, with tongs, pull apart the pork and drop it into broth. Turn on high for about two hours to fully cook meat and allow the juices to soak in. Turn down to warm to keep for guests.

Berry Patriotic Ice Cream Cake & July 4th Round Up

It’s Independence eve and here are some awesome 4th of July Patriotic inspired recipes and DIY’s!  Along with a Berry Patriotic Ice Cream cake perfect for dessert in this uber hot weather! I had hoped to post a picture of the cake but it doesn’t look like that will be happening until tomorrow as the ice cream is still setting.

At least the recipe for the Berry Patriotic ice cream cake can be posted! Then again there is plenty of pictures below to some incredible patriotic inspired dishes. They are all so pretty I am not sure which one I would pick!

On another note, today is my Uncle and Dad’s birthday. They are twins! We used to celebrate every year on the 4th. Plenty of fireworks and food, guess that’s why I enjoy that day so much. Berry Patriotic Ice Cream Cake

Total Time: 24 hours

Serving Size: 6 to 8

Ingredients

1/2 gallon of vanilla ice cream (Bluebell is what I used)
1 package of fresh blueberries
1/2 package of fresh strawberries; tops removed and sliced in half
1 package of Oreo cookies; crushed for bottom

Instructions

Line a cake pan or bread pan with plastic wrap. Set ice cream out briefly to soften. Once the ice cream is slightly soft layer in fruit and ice cream in layers. This will help disburse the fruit through out the cake.

Crush Oreo's in a bowl or plastic bag. Layer over top of ice cream and fruit mixture. The top of this will be come the bottom once the ice cream has set to the mold. Freeze ice cream for several hours or up to two days prior to serving. The longer is of course better!

Serve with fresh fruit on the side and/or caramel or hot fudge topping.

Red, White, and Blue Salad with Red Apple Balsamic

Do you plan your fourth of July menu in advance? Looking around for new recipes to try and show off to friends and family on the fourth is a past time for me. This year the inspiration of fruit side dishes is high on the list. This Red, White, and Blue salad with Red Apple Balsamic from Devo Olive Oil Co. is truly tasty.

Though, last year the patriotic cake I tried to bake never came out. It was a complete epic failure. My cake pans were so old that the cake stuck. Instead we made a crumble cake with patriotic roses on top. It was still cute! This year the idea is to try my hand at a new ice cream cake with a patriotic theme. Red, White, & Blue Salad with Red Apple Balsamic

 

The one reason I love working with Devo’s vinegar’s is how well they pair with fruit, salad, or meat. In this dish, the red apple balsamic soaked beautifully into the white pearl fresh mozzarella and held that flavor through out the dish. Some fresh basil or rosemary would go fabulous in this dish. Instead I choose not to add any seasoning and let the fruit accompany the vinegar with its own natural flavors.

Just cannot wait for this years Independence Day festival. Old cars, funnel cake, and Rick Springfield. What could be more fun? This one vendor even has the best peach tea. Red, White, and Blue Salad with Red Apple Balsamic

Total Time: 20 minutes

Serving Size: 6

Red, White, and Blue Salad with Red Apple Balsamic

Ingredients

1 package of blueberries
1 package of strawberries; sliced
2 cucumbers; quartered and sliced
1 container of fresh mozzarella pearls. drained
4 to 6 tablespoons of red apple balsamic vinegar

Instructions

Quarter and dice cucumbers then add to a large bowl. Add in blueberries with the cucumbers. Remove tops of strawberries and slice. Add strawberries in with the blueberries and cucumbers. Drain mozzarella pearls and a lightly toss with fruit mixture. Drizzle red apple balsamic vinegar over the fruit mixture while tossing lightly.

Optional: Add fresh basil or fresh rosemary for seasoning.

Chili Mac

With a 16th birthday and house remodeling taking up most of my time I have been absent from the blog for too long. Though luckily during all the remodeling I have been working on smaller projects too like DIY photography boards for my food photography. Plus, a list of recipes, including chili mac, that would look delicious here on the blog. It also helps if the family likes them.

Five people in one house can make it difficult to choose a recipe that everyone will try or enjoys. My oldest son does not like cheese. There is a few dishes that he will eat “certain” cheeses with like mozzarella. On the other hand, my daughter eats cheese but is not the biggest fan. My middle son, myself, and the other half all enjoy plenty of different cheeses. This is just a tiny dilemma since many dishes have cheese but it is super easy to remove it. Below is one dish I have found that the entire family will eat that does not come straight from mixing boxed food with canned food.

Chili Mac

 

Hearty meat, fresh spices, and comfort pasta make this dish so appeasing not only to adults but children too. Top it with cheese and onions for even more flavor. My son likes to add sour cream but I like mine with cheese and red onion. For extra heat the other half adds cayenne pepper over his after it is served.

Back to the DIY photography boards. Tell me these boards are not just super pretty? I just love playing with colors and leaving some natural. I am thinking about a post on how to make DIY photography boards with cheap acrylic paint, Elmer’s glue, and plywood. Just curious if any of my readers would be interesting in reading a detailed post about this?

Chili Mac

Total Time: 45 minutes

Serving Size: 6

Chili Mac

Ingredients

2 lbs ground beef
1 - 28 oz can crushed tomatoes
1 - 12 oz box of small elbow pasta
1 large white onion; diced
2 California sweet red peppers; seeds removed and diced
1 cup beef broth
2 tablespoons cumin
2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon chili powder
Salt and pepper to taste
1 tablespoon olive oil
1/2 red onion; diced (optional for topping)
Sharp cheese (optional for topping)
Sour cream (optional for topping)

Instructions

In a medium pot, fill with water and add in salt with olive oil. Bring to a boil and add pasta. Cook pasta according to directions on the box. Drain and set aside.

In a large pot, add ground beef, white onion, and red peppers along with beef broth. Cook until meat is browned. Add in cumin, paprika, chili powder, and cayenne pepper; stir well. Add in crushed tomatoes and turn down the heat to low. Bring the sauce to a slow, low boil and add in pasta. Do not let sauce burn, watch it closely! Stir in pasta lightly until covered with sauce and cook for about a minute allowing the sauce to soak into pasta.

Serve topped with cheese, sour cream, and/or red onions.

March Madness in my house generally consists of my son, Chancelor, watching the Boston Celtics as much as possible paired with quick fried recipes. Probably should implement some healthy recipes but it is our excuse to eat fried food ;)

This recipe is a knock off of the famous fried onion recipes that grace many steak restaurants in our area. Generally, this is the appetizer before you have steak. Slam Dunked Onion is makes enough to go around for five people. We usually have a guest or two over and still have plenty. It’s my opener and then I serve up some brisket tacos with all the toppings.

Slam Dunked Onion – LG Do March Right

Slam Dunked Onion – LG Do March Right

Ingredients

1 large yellow onion
1 1/2 cup flour
3 tablespoons paprika
1 1/2 tablespoons cayenne pepper
2 cups buttermilk
Oil for frying
Salt and pepper

Instructions

In a medium pot add vegetable oil and heat to 375 degrees F.

In a large bowl, add flour, paprika, cayenne pepper, salt and pepper. Whisk ingredients until will incorporated.

Slice onion on four sides slightly away from the top. Cut again between those slicing and repeat until you have petal shapes. Starting at the outer layer pull the petals down easily working your way to the center.

In a medium bowl, add buttermilk and onion bottom side down. Wet onion and then add to flour mixture. Toss flour mixture over the top of the onion with a graded spoon. Shake off onion and add to back to buttermilk upside down. Wet onion with buttermilk well and toss again with flour mixture. Shake off excess.

Add onion to the hot oil with petals facing downward. Fry for 2 to 2 1/2 minutes. Remove onion with spider and turn over with petals facing up and fry for 2 more minutes. Remove to paper towels or wax paper to drain. Serve promptly with ranch or sauce of choice.

Buttermilk Fried Pickles #SundaySupper

Buttermilk fried pickles is a recipe I make every Superbowl to start off the feast. The first few years I made these I used beer batter, regular flour, and a tons of spices. The spices have stayed but the beer and the flour changed after trying various recipes through out the years.

The first and foremost important tip to remember is to get Vlasic as these pickles are crisp. You MUST have a crisp pickle to make them or they will fall apart when frying. The flavor or spice of the pickle is up to you. I have fried up dill pickles but this year I am putting a twist on the traditional favorite by using bread and butter pickles. Along with that change I used cake flour and buttermilk to bread the pickles. The cake flour is light and airy. It creates the perfect batter and the buttermilk helps the flour to attach in flaky layers. Paprika and cayenne pepper are a must for seasoning!

 

Buttermilk Fried Pickles

Total Time: 30 minutes

Serving Size: 6

Buttermilk Fried Pickles

Ingredients

1 jar of pickles; your choice of flavor
1 to 1 1/2 cups cake flour
2 cups buttermilk
1 tablespoon paprika
1 tablespoon cayenne pepper
vegetable oil for frying
Salt and pepper

Instructions

Open pickles and drain off the juice into the sink. Place pickles in a large bowl. Pour buttermilk over pickles and let rest for about 2 minutes.

In a skillet or deep saute pan, add oil and heat to a medium heat for frying.

In medium sized bowl, add cake flour and spices; whisk until spices are integrated. Toss a few pickles in flour batter at a time. Add pickles to frying pan and fry for about 30 seconds to a 1 minute on each side. They will cook fast! If the batter starts to brown fast then turn down the heat a little. Drain pickles on a paper towel. Serve with ranch dressing or ranch dipping sauce.
