Easter Egg Salad

Easter is almost here! I have a colorful little dish that’s easy to make with all those left over Easter eggs. It’s Easter Egg Salad. It is a lot of fun to create. You can dyed the insides of the eggs with any colors you like. The more colors the more colorful your salad will be. What’s great is you can use this as a side dish on Easter and have more fun making it with your children or teenagers.

My son, Chancelor, helped me make this as I wasn’t feeling well. He said his fingers were going to be rainbow colored when finished. We used Americolor soft gel paste food color and water to dye the egg whites. The darker colors work better for the whites of the eggs. You can always use vinegar but we didn’t because we didn’t want the salad taste altered.  I love doing icing with these colors. They always have the best color turn out. Oh and they are really cool with pasta too!

Easter Egg Salad
Serves 3
Colored egg whites tossed with mayo and mustard to make a creamy egg salad.

Ingredients
  1. 5 hard boiled eggs
  2. 1 teaspoon mustard
  3. 1 tablespoon mayo
  4. Salt and pepper to taste
  5. Americolor dye of choice
  6. Water
Instructions
  1. Boil eggs in a small sauce pan for ten minutes or until done. Let cook in cold water.
  2. In five small bowls add a drop or two of Americolor food coloring gel paste and add a cup of water. Slice eggs in half and remove yolks. Dye whites of eggs to desired color. Place aside.
  3. Whip egg yolks with mayo and mustard. Add salt and pepper. Lightly fold in diced colored egg whites. Serve cold with ham or other Easter dinner meal.

Ingredients
  1. 1 package Kraft Fresh Take Italian Parmesan
  2. 4 chicken legs
  3. 4 strips of bacon
Instructions
  1. Preheat oven to 375 degrees F.
  2. Wrap chicken legs with bacon starting from the leg bottom to the top. Open Kraft Fresh Take Italian Parmesan and mix as directed on the package. Roll chicken in mixture and place in a small baking dish.
  3. Bake for 30 to 40 minutes as directed on package until chicken is done and outside is crispy.
Notes
  1. I cooked my chicken covered for one hour and then pulled off the cover and let the topping brown.

Baja Chicken Soup

Love this Baja Chicken Soup! It is completely simple to make. It comes together quick on a week night when I really don’t feel like cooking. Yes, I do have those days when cooking or even moving from my bed is a issue. Now and again I cook from cans. It’s one of those deals that I only keep certain canned food in the house. Tomatoes, beans, and corn are alright in my book coming from a can. You won’t find much else canned in my house. Maybe spinach for a quick side dish; the kids like it.

If allowed I would add spring onions and avocado to every dish. Fresh spring onions just have a mountain of flavor that I love. Avocado is just a fruit I grew up eating in California. It’s my nature to gravitate towards it. What’s great about baja chicken soup is it’s perfect for spring. It’s not a heavy soup which allows it function well during the non wintry season. I always love chicken in my soup but I am not a real fan of ground beef in soups. To me ground beef belongs in a goulash or maybe a stew. Do you like ground beef in soups?

As I am writing this post the news is coming across that there is a Tornado warning at the Daytona 500. I hope everyone is safe. I remember the year we had tornado warnings at Texas Motor Speedway. We sat in the lot waiting and listening to the scanner as they talked about what to do in case it did it. Some of the chatter was actually pretty funny.

A chicken soup with a spicy base with chicken, corn, black beans, and tomatoes. Topped with avocado and spring onions.

Ingredients
  1. 2 large boneless, skinless chicken breast; baked
  2. 1 small white onion; diced
  3. 1 large anaheim pepper; ribs removes, seeded and diced
  4. 1 tablespoon olive oil
  5. 48 oz. chicken stock
  6. 3 cloves of garlic; minced
  7. Juice of half a lime
  8. 1 tablespoon cumin
  9. 1 tablespoon paprika
  10. 1 teaspoon cayenne pepper
  11. 1 can black beans; drained
  12. 1 can whole sweet corn; drained
  13. 3 cans fire roasted tomatoes
  14. 1/2 bushel of cilantro; chopped
  15. 1 large avocado; sliced into moon shaped slices
  16. 2 spring onions; sliced
  17. Salt and pepper to taste
  18. 3 to 4 cups of water
Instructions
  1. Preheat oven to 400 degrees F and bake chicken for one hour. It will cook more in pot so if it is a bit pink it's fine.
  2. In a large pot, add in anaheim peppers, garlic and white onion with one tablespoon olive oil and cook over medium high heat. Saute for about 3 minutes. Add in chicken with cumin, paprika, and cayenne pepper. Stir well. Add in chicken broth. Stir and add in corn, black beans, and fire roasted tomatoes. Stir well combining all ingredients. Add 3 to 4 cups water depending on desired broth amount. Add in cilantro but reserve some for garnish. Add juice of half a lime. Bring to a boil and simmer for 10 minutes.
  3. Slice avocados and spring onions. Salt and pepper soup to taste. Serve topped with fresh cilantro, avocados, and spring onions.
Notes
  1. You may use rotisserie chicken in the place of baked chicken to shorten time.

Who said strawberries don’t go on a sausage breakfast sandwich? Well I do! When I was a kid we always added strawberry jam to our breakfast sandwiches. I thought why not remove the sugar and just top a breakfast sandwich with yummy strawberries. In my house with plenty of teenagers the best breakfast is one that is easy to eat on the go. Sometimes that can mean very unhealthy breakfasts for them. I prefer fresh fruits and good meats for protein in the morning. It gives the necessary energy needed for their day for a quick healthy breakfast. You have to try this strawberry and sausage breakfast sandwich.

I picked up the Wright Brand sausage in a tube at Walmart and used some for my breakfast sandwiches and the rest to top over spaghetti. We cooked it in a burgundy wine before topping it on the spaghetti. Anyway, this is my recipe for a strawberry and sausage breakfast sandwich. Walmart stores will have a demo on January 30 – February 2. You may look over the demo list here to find a location nearest you. I love store demos because it gives me a chance to really have a taste of the product and know what I would pair with it.   1. Wright Brand sausage tube
  2. 1 can of jumbo biscuits
  3. 10 strawberries; sliced
Instructions
  1. In a medium pan, roll sausage into patties and cook until done per package directions. While cooking sausage bake biscuits according to package directions.
  2. Slice strawberries and layer on bottom and top of biscuits. Add sausage to the bottom layer of the biscuit and add top and strawberries. Serve fresh or wrap with plastic wrap and save for breakfast on the go.

Smucker’s Naturals – Peanut Butter Rolls

Growing up near Knott’s Berry Farm meant Smucker’s all the time. They have since become separate entities but I still love their jam and even more so their all natural peanut butter. When I first encountered Smucker’s natural peanut butter on the shelf my thought’s were “They make peanut butter?” and in the basket it went. I am a serious Californian based in Texas and you just don’t get those goodies here all the time. Now that it’s a regular on the shelf here I have to say the coolest treat we’ve made with it is peanut butter rolls. You can add jelly or mayo, if you swing that way, to it or just have them by themselves.  The daughter likes hazelnut spread on them.

When  I first made these a few years ago the boys took them to school. All of the teenagers are their school wanted to trade lunches with them. After that my cap’n crunch cookies were the big cheese. It’s nice to have people appreciate your food along with your talent too. Just as much as I appreciate the outdoors. I have my days where watching a movie with beautiful forests in them make me feel like I could go live in the trees. Other days I don’t want to even walk outside. That being said this January, Smucker’sLaura Scudder’s and Adams Natural Peanut Butter have teamed up to support the national parks through a $100,000 donation to the National Parks Conservation Association’s (NPCA) America’s Great Waters Program. Starting in January, look for the .25 cent-off coupons on shelves in your local stores towards the purchase of a jar of natural peanut butter. For every coupon redeemed by March 24, 2014, Smucker’s will donate $1 to the NPCA, up to an additional $50,000.

Instructions
  1. Lay bread flat and cut off crust. Using a rolling pin roll the bread flat. Lightly layer bread with peanut butter. Roll from top to bottom. Slice into threes.

  1. You can use any fillings you would like including jelly, hazelnut spread, chocolate spread, and mayo.

We made all the ingredients and set it out separately so the teens can decide what they would like to add to their bowls. The oldest is a very picky eater but even he enjoys the chicken.

What’s even more super cool is that you can look for specially marked packages of Tyson Cheesy Chicken Nuggets, clip the token coupon on the back of the package, and bring it to Chuck E. The more I could save when the teens were little the better! They still like going to Chuck E. Cheese; you never grow out of it! Skee ball was always my favorite.

Cheesy Chicken Bowls

Ingredients
  1. Tyson Cheesy Chicken Nuggets
  2. Tyson Spicy Chicken Nuggets
  3. 1 can of sweet corn; drained
  4. 1 to 1 1/2 cups of shredded cheese
  5. 2 packages brown gravy
  6. 6 sliced of bacon; cooked and diced
  7. 8 to 10 peeled Russet potatoes; diced into cubes
  8. Salt and pepper
  9. 1/2 to 1 cup milk
  10. 2 tablespoons butter
Instructions
  1. In a large pot, boil potatoes with water and salt until tender. Half way through boiling potatoes preheat oven to package directions and cook chicken. Fry the bacon and dice into bits.
  2. Drain potatoes and add to a large bowl. Add butter, milk, salt and pepper. Whip potatoes with a hand blender until creamy. Make gravy per package directions. You can also use ready made gravy. Open corn and drain; add to a small bowl.
  3. In a bowl, add mashed potatoes, corn, gravy, cheese and bacon bits. Add chicken to the side of the bowl and it's ready to serve.

Recently, a friend of mine for over 20 years that is a chef cooked my family dinner.  He made a chili with ground chicken and pork sausage mixed together with black beans. My family loved it! I didn’t get a chance to try it because my jaw was infected. This amazed me as every time I tried to feed my family any other ground meat besides beef they usually refuse to eat it. Then I decided to make Country Club Chicken Tortellini. They actually ate it too!

Tyson actually sells ground chicken so you don’t have to have a fancy meat grinder for your Kitchen Aid to get ground chicken. It’s also inexpensive which is a definite plus. I picked it up at Walmart in the chicken section. See my Google + album for my shopping experience!

How to make Country Club Chicken Tortellini

Here is what you will need to make Country Club Chicken Tortellini.

Dice onion, slice mushrooms, and smash the garlic. Set aside. Sorry, the garlic and tortellini’s didn’t make it into the picture above.

Take five or six strips of bacon and slice it into pieces.

Fry bacon with a bit of olive oil until bacon is cooked. Set bacon aside on a plate and leave bacon grease in the pan. Add ground chicken to bacon grease and fry until chicken is a light golden brown and cooked all the way through. Put on pan of water on to boil for tortellini’s with a pinch of salt and a tablespoon of olive oil.

Drain excess grease and place chicken in a bowl on the side. Add tortellini’s to pot and cook per the directions on the package. In the same pan add in one stick of butter, the onion, the mushrooms, and the garlic. Add a pinch of salt. Saute the vegetables until they become tender and butter is melted. Add 1 cup of heavy whipping cream and cook on medium heat until the cream thickens. You will know when the cream is thick as it will stick to the spatula or spoon and not run off easily. Once it thickens add in the parmesan cheese. About 1 cup to 1 1/2 cups of the cheese. Fold in the cheese and remove from heat. Drain the water from the tortellini’s.

In a large bowl, combine chicken, tortellini’s, and sauce. Fold the sauce in over the chicken and the tortellini’s. Top it off with crumbled bacon and Italian parsley for garnish.

  1. 1 package of Tyson's Boneless Wyngz - Buffalo Flavor
  2. 1 small jar of dill pickles
  3. 1 package of rolls or slider buns
  4. 1 bottle of dressing (ranch or blue cheese)
Instructions
  1. Cook buffalo wings per directed on package at 400F degrees for 18 minutes. Slice wings in half. Slice rolls in half and layer wings onto the roll.
  2. Top wings with pickles and drizzle with blue cheese or ranch dressing. Add top of roll and serve. Each boneless wing makes one slider.

Summer Chicken Soup

Summer chicken soup is for those days you want to stay inside, curl up on your couch, and watch movies with your teenagers. Sometimes we will do movie marathons like all Harry Potter films, Pirates of the Caribbean films, or Lord of the Rings films.  Once in a awhile, it is a two day fest and we do all Star Wars films.

Films are a huge past time in our home and we completely enjoy group outings to the movies. My middle son, Chancelor, is a movie connoisseur and we share many movie moments. With the release of last Harry Potter film he said it was like the ending of his childhood. Super sad!

Today is Harry Potter & J.K. Rowling’s birthday and I didn’t even know it until after I started this post! Happy Birthday to both of them. Looks like some lunch and Potter movies are in order for my daughter and I. Wish we still had some of this soup left over but they devoured it. She just tried to snag me and watch The Fosters but instead we are watching Catfish temporarily then some HP.

Enough about movies and TV shows. I want to tell you about this amazing summer chicken soup! Total comfort food and light for the summer time. I used stelline pasta and peas to round off taste and color. The chicken is slow cooked first and then vegetables are added in. Lastly the pasta and peas. This summer chicken soup is a simple dish to make. However, it does take some time to slow boil the chicken.

Is there a favorite pasta you like in your chicken soup? Or are you the big dumpling fan? Personally, I am fan of orzo’s or stelline because small pasta to me allows for more juice and carrots! I am interested to know what you like in your soup.

Ingredients
  1. 5 chicken leg drumsticks
  2. 1 lb carrots
  3. 1 cup peas
  4. 4 cloves garlic
  5. 1 large white onion
  6. 1 container of chicken broth
  7. 1 package of stelline pasta (stars)
  8. 1 tablespoon cumin
  9. Salt and pepper
Instructions
  1. In a large stock pot, add in chicken legs and cover with water 3/4 of the way full. Add cumin to pot. Bring water to a boil and lower heat to low and simmer for about two hours until the water looks like a broth. It will be darker with oils.
  2. Bring the chicken back up to boiling for about 20 minutes. Reduce to low heat again. Remove chicken from the pot. Remove meat from the bones and add the meat back to the pot. Make sure that all bones even small are removed from the pot. Remove chicken skin also.
  3. Once all meat is added back cut tops and bottoms off the carrots, cut in half, and add them to the pot. They do not need to be diced as you will mash them later. Add diced onion and minced garlic to the pot. Cook until vegetables are soft. Pull out carrots and mash them with a fork and add them back to the pot. Add in extra chicken broth. Add salt and pepper. Bring back to a low boil.
  4. Add three handfuls of stelline pasta and 1 cup of peas. Cook until pasta is almost completely soft. Turn off pot and serve with french bread.

Summer time is here and for us that means visits to lakes and pools. Sometimes you just have enough of grilled food. My family insists that BBQ grilled chicken is am absolute no in our house at the moment. Though, chicken is healthy and needs to be a part of your weekly meal planning. Chicken wraps are fantastic with Tyson’s Chicken Fries used with dips and perfect for a chicken dinner.

Instead of cooking up some grilled chicken or another style of hot dog Tyson’s Homestyle Chicken Fries are perfect for a lunch or dinner on the go out to the lake. Simple to heat up in the oven and toss them in to a delicious chicken wrap. Tomatoes, cucumbers, sprouts, lettuce, or cheese the fillings are endless and full nutrients that are needed when your out in this summer heat.

We like our chicken wraps with sun dried tomato wraps along with cherry tomatoes, lettuce, and zesty Italian dressing. A little fresh Parmesan cheese adds an extra kick of flavor to the wrap.

She really loves these chicken wraps when we go to the lake! Easy to wrap with foil and just toss in a bag off in the cooler. What’s great about chicken is it is edible cold or hot.

Ingredients
  1. 1 Tyson Chicken Fries
  2. 1 package cherry tomatoes
  3. 1 head of lettuce
  4. 1 package of sun dried tomato wrap tortillas
  5. 1 small bottle of zesty Italian dressing
Instructions
  1. Preheat oven as directed on the back of the Tyson package. Cook chicken until done as directed.
  2. Wash lettuce while separating and set aside. Wash tomatoes. Slice tomatoes in halves and set aside. Lay out wrap and fill with chicken, tomatoes, lettuce, and drizzle with dressing. Roll up wrap and enjoy!
