Easter is almost here! I have a colorful little dish that’s easy to make with all those left over Easter eggs. It’s Easter Egg Salad. It is a lot of fun to create. You can dyed the insides of the eggs with any colors you like. The more colors the more colorful your salad will be. What’s great is you can use this as a side dish on Easter and have more fun making it with your children or teenagers.
My son, Chancelor, helped me make this as I wasn’t feeling well. He said his fingers were going to be rainbow colored when finished. We used Americolor soft gel paste food color and water to dye the egg whites. The darker colors work better for the whites of the eggs. You can always use vinegar but we didn’t because we didn’t want the salad taste altered. I love doing icing with these colors. They always have the best color turn out. Oh and they are really cool with pasta too!

- 5 hard boiled eggs
- 1 teaspoon mustard
- 1 tablespoon mayo
- Salt and pepper to taste
- Americolor dye of choice
- Boil eggs in a small sauce pan for ten minutes or until done. Let cook in cold water.
- In five small bowls add a drop or two of Americolor food coloring gel paste and add a cup of water. Slice eggs in half and remove yolks. Dye whites of eggs to desired color. Place aside.
- Whip egg yolks with mayo and mustard. Add salt and pepper. Lightly fold in diced colored egg whites. Serve cold with ham or other Easter dinner meal.
